Pumpernickel
Rye flour and molasses give pumpernickel bread its rich color and
flavor.
This coarse, dark bread with a slightly sour taste is a favorite in Eastern Europe. It
usually contains a higher proportion of rye flour to wheat flour, as well as molasses, which adds both color and
flavor.
Varieties
Pumpernickel is available in rolls and loaves of various shapes and sizes, including
