Yellow-eye beans are small, off-white beans with a characteristic yellowish-brown
“eye” marking the point where the bean once attached to the pod. Popular in Maine,
this variety has a mild flavor that is similar to that of Navy or Great Northern beans, but is
also considered superior in taste.

Soak the beans overnight and cook them like any other variety of white beans—for
about 20 minutes in a pressure cooker or 1 1/2 to 2 hours on top of the stove. 1 cup of dried
yellow-eye beans makes approximately 2 1/2 cups of cooked beans.
